Rustic Cherry Tomato Pasta



A gluten free take on a rustic Italian dish. Using common ingredients, this dish is perfect for a quick weekday meal.  

Ingredients:

6 cups whole cherry tomatoes
3/4 lb sausage  
~12 oz gluten free pasta (we find Tinkyada pasta works best) 
 
 Large handful of spring mix 
1 white onion 
Fresh basil  
1/4 tsp sugar
1/4 cup Parmesan  
 Assorted spices


Directions:
  1. Chop tomatoes and onion. Quarter tomatoes and dice onions. 
  2. Caramelize onions in a pan.
  3. Add sausage to onions and brown. 

  1.  Cook pasta according to package.
  2. Save at least one cup of pasta water for later. 
  3. Remove sausage and onions once browned. Add chopped tomatoes to the pan. Time to use all of that delicious sausage grease. Yum.
  4. Simmer the tomatoes in the pan. Begin to mash with a fork. 
  5. After about 5 minutes, add seasonings (salt, pepper, sugar) to taste.
  6. Add your spring mix and allow to wilt. 
  7. Add pasta water. Bring to a simmer. 
  8. Once simmering, take off heat, and add all ingredients to a large bowl. 
  9. Add sliced basil (please for the love of god slice it gently) and parmesan.
  10. Mix well. Add extra basil and parmesan to taste.
